About Kuheiji

Kuheiji is one of the most philosophical and terroir-driven sake producers in Japan, treating sake less as a beverage and more as an agricultural expression. Based in Aichi, Banjo Jozo farms much of its own rice, approaching brewing with the mindset of a vigneron—soil, climate, and year all matter.

Human is Kuheiji’s meditation on balance between nature and intention. The label reflects their belief that humans are not separate from the land, but participants in it. Brewed with estate-managed Yamadanishiki and Kuheiji’s restrained, precise hand, this Junmai Daiginjo is about clarity, restraint, and quiet depth rather than overt aroma.

Tasting Notes

The nose is restrained and pure, with pear skin, white flowers, and steamed rice. The palate is silky and precise, showing green apple, white peach, almond milk, and gentle rice sweetness. Subtle acidity and chalky minerality give lift, leading to a long, dry, quietly contemplative finish.
