Tasting Notes
This Hiyaoroshi, made from Omachi rice, reveals the bold, distinctive character of Japan’s oldest sake rice. Through six months of chilled maturation, its natural smoothness deepens into layers of richness. The nose is sweet and enticing, with aromas of yellow peach and lychee. On the palate, a viscous texture carries juicy sweetness and umami reminiscent of concentrated Pione grapes, while the finish unfolds with graceful complexity in waves.
