Tasting Notes

Brewed with the “king of sake rice,” Yamadanishiki, this Hiyaoroshi expresses an elegant profile highlighted by layers of fruity acidity and subtle minerality. Aged gently for over six months at low temperatures, it develops aromas reminiscent of sweet muscat grapes and fresh apples, balanced with umami depth. On the palate, it is rounded and smooth, finishing with a long, lingering aftertaste full of maturity and refinement.

Overview

Part of Ohmine’s Hiyaoroshi fall release series, this sake is brewed using a rapid heating-and-cooling system to minimize dissolved oxygen, ensuring freshness even after aging. Best served chilled (8–12 °C) in a wine glass to emphasize its balance of fruitiness, umami, and minerality. Excellent with Japanese cuisine, light seafood dishes, or delicately seasoned vegetable preparations.
